Yes, I count show-stamped 1/1's and certain Final Vault cards as 1/1's (Just the ITG Masked Men Gold 1of1 Vault Stamps, since they were recognized as 1/1's in that product) as part of my count, along with "True" 1/1's and Printing Plates also. So I do count a lot of things as 1/1's for my collection, which some might find it "cheating", but oh well haha.
Oh man, that's a tough question. I'll mention a few that stick out for me:
Enroth's 2009-10 The Cup Gold Rainbow RPA and 2009-10 SPGU SIGnificant Numbers are both 1/1 due to his #1 jersey number and I have not seen either of them surface, not even a photo. They are true whales in every sense of the word. I'd love to add those cards to my collection at some point if I can.
Other than those rookie-year Enroth cards, I would love to acquire the 12-13 Fabric of The Game Mirror Black Tag 1/1 (would finally complete a 6-card rainbow), along with the 13-14 Panini Prime Authentics 1/1, both of which I have also never seen.
I have a lot, but my 1/1 wantlist currently stands at 142 1/1's remaining. I've added a lot of extra show-stamped stuff to that list over the years as well. While this does increase the size of my overall wantlist, I don't mind as at least I have an accurate list of what Enroth cards are out there and what my overall completion percentages truly stand at.
With 1/1's included, my current collection count stands at 391/536, which roughly equals out to 73% completion for this collection of mine.

Just did a quick search for them myself and couldn't find anything. I'll be sure to keep an eye out for them as I'm sure everyone else will should they ever see them. Looking forward to more tremendous pickups. Would love to see a top 10 or 20 in the future =)

Thank you so much! A Top 10 or 20 would be incredibly hard to choose from, haha. Maybe one of these days I'll sit down and crank out a nice show and tell with some of my favourites. Maybe once I hit 500 cards in total for my Enroth collection? Currently sitting at 485 cards with today's update.
Thank you so much for your comments, everyone! They are all read with care and much appreciated. Trust me, they do not go unnoticed. My PC feels like "The Little Engine That Could" in a lot of ways, and while I do not collect a superstar who is in the hobby "mainstream" or a player who is included in all the latest-and-greatest card products and on the highlight reels every day for all to see, I do appreciate everyone tuning into these updates when I grab something new for my collection.
Somedays I wish I had a superstar collection to "wow" everyone with each and every pickup, but alas I do not and I honestly wouldn't have it any other way. I have a blast running this PC thread and I hope you all enjoy viewing it. This thread is about to hit 500 replies soon and has been active for a few years now, which I think is pretty darn cool I think.

I was only expecting one, but I actually received two new pieces for the Enroth collection today!!
The first is a 2019-20 KHL Dinamo Minsk New Year's Exclusive Team Issued card that I received from a collector in Belarus, Minsk. For those who have followed my progress for this collection, you might remember these tough New Year's Exclusive cards from the past two seasons. While a lot of these were printed, they are very tough to acquire due to the nature of this 'release', as they were only gifted to season ticket holders of the club.

The next item was actually used to wrap around the card to protect it, but it actually ended up being a really cool item that I plan to keep for the collection. This appears to be a pre-game Dinamo Minsk lineup card between Dinamo Minsk vs Admiral Vladivostok on November 26th, 2019. Jhonas Enroth's name does appear on the linup card, as his Russian name Юнас ЭНРОТ is the first name listed on the top left-hand column. This lineup card is probably an extremely common given away at Dinamo Minsk games, but for someone like myself who would have never been able to grab an item like this live, I think this is actually pretty cool. Normally I wouldn't care for this stuff, but seeing all that Russian text is pretty neat. One man's junk is another man's treasure.

Very cool additions for sure, very unique. I absolutely love seeing your progress and pickups, and I feel like we have very similar collections in terms of collecting lesser-appreciated players. It’s honestly just more fun to be THE guy for a player. Sure, everyone wants McDavid rookies and autos, but in a way, it isn’t really special to have a bunch because so many other people do. That’s what I love so much about dedicated player collectors, especially those who go after guys not in the limelight.

2017-18 SeReal KHL Exclusive Collection Stick and Jersey 1/3. This card was initially held back from Part 1 product but was eventually inserted into the 2018-19 edition of the KHL Exclusive Collection Part 2 as an added chase card.
Two of the three copies were spoken for immediately after the product launched and buried in Dinamo Minsk collections, so I thought all hope was lost, but a collector from Belarus offered this to me recently and I couldn't let it slip away. These cards are beyond awesome and just look superb.
Looks good with these other two to complete the 3-card memorabilia rainbow...
